Tonight is a night of nibbles and delicious treats. Assorted breads and spreads can liven up any time of day, meal, make a great snack, and put some quality ingredients to good use! In this class, you’ll learn how to assemble and pair ingredients for use atop crisp breads and other things, how to prepare an award-winning tapenade, and the difference between bruschetta and crostini- where bruschetta is grilled, rubbed with garlic then drizzled olive oil and adorned usually with basil and tomatoes or other and crostini are thinner, smaller slices of bread adorned with savory spreads and cheeses. These are the kind of snacks that are easy to prepare using the goods you have on hand in your pantry! You’ll leave with the know-how required to throw a memorable get together using these easy and elegant snacks prepared in advance so you can enjoy yourself at the party or to prepare any night of the week when you’re just dying for something to munch on.

A lover of elegant snacks, Tina DeGraff, Ger-Nis Culinary & Herb Center Manager, is no stranger to working in the food world and in the span of her career she has traveled the country and worked at Michelin star restaurants in San Francisco and Los Angeles, along with notable restaurants in Washington DC. She has honed her skills working with highly acclaimed chefs in fine dining kitchens, both in savory and pastry. Deciding to step out of the fast paced kitchen culture, she now brings her talents to the classroom setting, teaching about healthy eating and mindful thinking when it comes to our diets. The kitchen is her favorite place to be besides lounging on the beach. When Tina isn’t cooking, she enjoys being in the outdoors, biking, running or hiking. Contact Tina

Nissa Pierson

Our own Nissa Pierson, Managing Director of Ger-Nis International, is a master when it comes to traveling the world seeking organic & fair-trade conversation, she is a noted cooking instructor specializing in fresh herbs as well as an extremist in proving that the art of eating and cooking well is a relatively simple process and just takes enthusiasm and some tid bits of knowledge. Besides being a passionate teacher of fresh herbs, organics and fair-trade, she enjoys spice (in her food and in her life), good conversation and debates, kickboxing, the ocean and surfing, and submersing herself in the food and culture of the world.
