Traveling through the spice markets of the world, inhaling the deep and rich fragrances of exotic spices is one of life’s greatest pleasures. Just a touch of spice can transform the ordinary into a distinct and magical experience, instantly commanding a role as a mainstay in your pantry. Children are often forgotten when it comes to spice, and we all too often fear exposing them to spice, which is really tragic as its proven that young children’s pallets are more open when introduced to new flavors at a young age. Spices are a common denominator from cultures around the world- each with their own preferences and traditions of use that have been titillating the senses for ages. In this class we will transform the Ger-Nis Culinary & Herb Center into the greatest spice market of our time and submerge children in the fragrant, rich world of spices from the stimulating and fiery to the intoxicatingly calming, filling our kitchen with aromas that will mentally provoke in the students that which is unexplored. We will wind through the history and cultures of the world’s spices, learning a bit about where our most predominant spices came from. We will expose children to the art of grinding and toasting spices, mastering the use of the spice grinder and the mortar-pestle. We will learn to identify by sight, smell, and taste, basic spices found in kitchens. Children will get to know what we consider to be the three families of the spice world. The class will give children a gentle, guiding “push” into the world of spice!

Seeds & Pods: Aniseed, Caraway, Cardamom, Celery Seed, Coriander, Cumin, Dill, Fennel, Mustard, Nutmeg, Poppy, Sesame, Star Anise, Tamarind, Vanilla

Berries & Flowers: Allspice, Clove, Juniper, Pepper, Saffron

Roots & Bark: Cinnamon, Galangal, Ginger, Horseradish, Licorice, Turmeric

Recipes:Sweet & Spicy Ice Cream: Cinnamon, Nut Meg, , Cardamom, Star Anise & Clove Vanilla & Ginger, Pickled Cucumbers: Mustard Seeds, Dill Seeds, Caraway Seeds, Fennel seeds, Celery Seeds, Quick Bread Sticks With Sweet & Savory Seeds: Anise Seed, Black & White Sesame Seeds

Class Type: Middle Child (ages 6-12 years old), hands-on cooking class

Class Notes: Students will take home their own freshly made spice mixtures

Managing Director of Ger-Nis International, Nissa Pierson, revels in the art of applying and arranging spices and herbs to her infamous dishes. Collecting wisdom on the subject on coasts near and far, she has achieved expert status on the subject. In addition to traveling the world seeking organic and fair-trade conversation for her business, she is a noted cooking instructor specializing in fresh herbs as well as an extremist in proving that the art of eating and cooking well is a relatively simple process, just requiring enthusiasm and simple know-how. Besides being a passionate spokeswoman for fresh herbs, organics and fair-trade practices, she can’t get enough spice (in her food and in her life), good conversation and debates, kickboxing, riding the surf, and seeing the world around her in a new light.
