Our first stop in our Tour of Central America series will be made in the realm of hot sauce. While not all Central American and Caribbean food is spicy, no meal would be complete without the option of hot sauce. Bottles of homemade hot sauces are readily available all over Central America and the Caribbean, but their recipes are guarded with utmost secrecy. Throughout this class, Nissa will work to demystify the makings of hot sauce for you by using a few versatile recipes you can make at home. These can then be enjoyed with just about any dish that cries out for a bit of spice. The art is simple, the spice is hot! Come try your hand at both the sweet and savory salsa picante.

Owner and director of Ger-Nis International, Nissa Pierson, knows a thing or two about hot sauce. Using a multitude of different ingredients to achieve the right degree of heat without neglecting other balancing flavors, Nissa has experimented and fine-tuned what makes a great hot sauce. Nissa finds solace in Central American cuisine, more than apt and willing to feast on it on a daily basis (which is unusually due to her distaste for regularity), having spent most of her childhood in Southern California. At 12, she learned love for the land and its people during her time in Nicaragua which in turn played a role in becoming a passionate advocate for fair-trade, organic products.
