You scream, I scream, we all scream for ice cream! All over the world one of the greatest pleasures people of all ages share is a mutual love for ice cream, sorbets, gelato and granitas. With their sweet, cooling and rich way of treating us on summer days, there’s no denying their power! Summertime delivers the tongue tantalizing main ingredients that are unequivocally necessary for the hot and sticky days. Summer fruit & herbs take the lead in our recipes, providing endless possibilities of ways to please our palettes while cooling us off. In this class, we explore the difference between ice scream, sorbets, gelato and granitas and the different techniques we use in making them while discussing where they originated from and different ingredient combinations for every one! You’ll walk away knowing all the different methods of making ice cream and different machines used in their preparation. As an added bonus, we’ll cover how to make waffle cones from scratch!

Ashton Keefe is a private chef, caterer, and food stylist in New York. After graduating from Wake Forest University with a BA in English and Entrepreneurship she studied Classic Pastry Arts at The French Culinary Institute.
