It’s not so easy as it might seem to make your own ice cream sandwiches, but it certainly is satisfying and rewarding! However, with the proper technique and strategy, we’ll be able to make some fantastic tasting, bizarre seeming yet healthy versions of the old classic summertime treat! We will be using premade (but homemade) ice creams in this class so that we can focus on teaching you how to assemble creative and successful ice cream sandwiches, from making the creative sandwiching materials to pairing flavors and simple techniques to rely on when the craving for an ice cream sandwich hits! It all depends on the consistency and texture of your insides and the strength and capacity of your “strongmen” or bookends that hold it all together! This is a skill to truly be in awe of and one you certainly won’t be able to resist using time and time again! For the grand finale, we’ll test all that we’ve learned about proper sandwiching strategy by dipping one of our ice cream sandwiches in chocolate as well as proper storage and handling techniques. This class is for the truly creative who doesn’t seem to mind trying something different!

Nissa Pierson

Managing Director of Ger-Nis International, Nissa Pierson, is always looking for ways to help others avoid purchasing processed foods full of ingredients we can’t pronounce, loaded with bad fats, and high in sodium. Her latest quest is the ice cream sandwich, and it turns out to be much easier than most expect. The simple design of a sandwich allows a lot of room for creative leverage, and she’s excited to share what that has come to mean with you in regards to ice cream sandwiches! In addition to running Ger-Nis, Nissa is a long-time culinary instructor, specializing in fresh herbs. Besides being a passionate teacher of fresh herbs, organics, & fair-trade, she enjoys spice (in food and life), good conversations and debates, kickboxing, surfing, and submersing herself in the food and cultures of the world.
