Low in calories with a high flavor impact, summer garden gazpachos make for the perfect soupy saviors for those morbidly humid days and nights! It’s easy to hit the farmers market in a pinch to pick up all of the essential ingredients for preparation, supporting your local community, saving time, adding fun and eating well! With all of the fresh produce available at this time of year, there is no limit to what we can transform into a fabulous gazpacho! In this class, we’ll not only learn gazpacho recipes, but we’ll explore the history, tracing it back to the Moors of Spain and the Andalusian region, specifically. What started out as a soup of bread, garlic, olive oil and water soon included vinegar and suddenly tomatoes and cucumbers followed suit creating the gazpacho we know today! We’ll talk about the basics of gazpacho, among them using a mortar and pestle to achieve the perfect consistency. But we won’t focus on the traditional gazpachos, this class is all about using the gazpacho ideals along with summers magical bounty. We will not only kick it up a notch incorporating garden vegetables other than normal traditional gazpachos, we will be transforming succulent summer fruit into dream like summer soups by using such creatures like grapes, melons and mangoes! And we will do learn some fun creative ways to bring gazpacho into a whole new light! Ripen up your gazpacho repertoire with us!
