We’ll be whisking your middle chefs through the world of spices in this class, focusing on global cuisine and food culture. We’ll transform the Ger-Nis Culinary & Herb Center into Brooklyn’s greatest spice market of our time and submerge children in the fragrant, rich world of spices from the stimulating and fiery to the intoxicatingly calming, filling our kitchen with aromas that will stimulate their minds and curiosity. We will wind through the history and cultures of the world’s spices, learning a bit about where our most predominant spices came from. We will learn to identify by sight, smell, and taste, basic spices found in kitchens. We will expose children to the art of grinding and toasting spices, mastering the use of the spice grinder and the mortar-pestle and use these to prepare pancake and muffin mixes with an added emphasis on fresh, seasonal produce. We will make spiced pancakes and muffins with fresh, seasonal fruits to enjoy in class along with fresh, homemade spiced blueberry syrup and spiced butter! Kids will gain an understanding of how ingredients come together to create a final meal, how spices are used to incorporate added flavor and texture and have fun learning tactilely! Middle chefs will take home their own crafted globally spiced pancake mix!

Managing Director of Ger-Nis International, Nissa Pierson, loves introducing kids to new experiences that’ll enrich their minds and their lives. Spices are one of the most interesting ways to introduce children to the culinary world due to their stimulating sensory properties, and she looks forward to sharing this with the middle chefs! In addition to running Ger-Nis, Nissa is a long-time culinary instructor, specializing in fresh herbs. Besides being a passionate teacher of fresh herbs, organics, & fair-trade, she enjoys spice (in food and life), good conversations and debates, kickboxing, surfing, and submersing herself in the food and cultures of the world.
