Winter is here and with it comes a need of warmth, yet many of us still want to keep our cooking healthy and somewhat light. What better way to add flavor to our winter cooking than with an abundance of seasonal, fresh herbs? For those of us who don’t know much when it comes to fresh herbs and may be a bit intimidated by the task of choosing, storing, and using—this is the class for you. We will learn the basics of all the fresh herbs, focusing on winter herbs, from growing to handling, to selecting, to storage, along with tips for using them in your daily meals. We’ll show you how to dry, pound and freeze these guys as well so that “waste not, want not” again becomes your motto. We’ll work together to prepare a comforting light winter menu that showcases the season’s prime herbs: Rosemary, Sage, Thyme, and Winter Savory to name a few. You will become an herbal expert in no time while our own herb expert Nissa helps you learn to bring out the flavors of any dish or beverage, creating zestier and tastier recipes to brighten your winter menu and spirits. The ideas are endless and the uses are bountiful, so stop and think about what you can use that bunch of herbs for before you let it wilt away in your refrigerator and worse yet, decide to throw it out! Take a load off and learn to listen to what these herbs are saying while we talk about them too!
