Everyone is familiar with the versatility and brilliance of pasta & pesto, but we can’t all say we’ve made it from scratch using our BARE HANDS. We’re going old school with this one and making pasta from scratch. We’ll be traveling down memory lane with Instructor Nissa Pierson as she re-enacts her times in Italy. She brings us with her  down memory lane or in this case – the Lingurian Coast in the great State of Genoa, which is also the home of Genovese basil, the best basil for pesto! She learned the secret of the old school pasta and pesto makers, while on an herbal  excursion years ago and she’s going to share with all  in this class.

We’ll earn how to make fresh pasta dough from scratch, both eggless and with eggs. We’ll make some plain cheese raviolis and we’ll be using very basic kitchen tools and our hands to shape and make the various pasta shapes of the Genoan region of Italy. After learning the fresh pasta making tricks and techniques this class has to share with you, you’ll never lack simple & deliciously herbal recipes to use that will wow your friends and family and even yourself time and time again! We will demonstrate the art of hand pounded pesto and give you a crack at this lost art as well. You’ll leave with a greater appreciation of  all the handiwork it takes to create homemade pasta & sauce using the tools we’ve had since birth, our hands.

She is fully committed to the community, as well as the planet, focusing on the entire cooking and eating process, from grower to “cooker.” In addition to traveling the world seeking organic and fair-trade conversation for her business, she is a noted cooking instructor focusing on fresh herbs as well as an extremist in proving that the art of eating and cooking well is a relatively simple process and just takes enthusiasm and some tidbits of knowledge. She has specialized in children’s cooking classes for many years and believes children are seeking better food knowledge and is always up for the challenge. Besides being a passionate teacher of fresh herbs, organics and fair-trade, she enjoys spice (in food and life), good conversation and debates,  the ocean and submersing herself in the food and culture of the world.
