Senegalese Chicken Yassa; Cooking Up Culture, Bolinas After School Program

This year with the Bolinas after school program we embark on the discovery and celebration of global cuisines. Learning flavors, ingredients and techniques of the world while we try to understand how culture, access to ingredients and even politics can shape the foods we eat.

Chicken Yassa is a specialty from the Casamance region in the southern sector of Senegal. The dis and variances of it is served throughout Africa.  Its basic premise is whole chicken, cut up into its parts, marinated in lemon and lots of onions. The chicken is then grilled or pan fried and the marinade cooked down to a sweet-tart sauce. The dish uses a lot of onions and proves that onions are incredible flavor agents and can turn incredibly sweet when slow cooked as they are in this recipe. The chicken is served with white rice and yes we learn how to perfect that as well. Which we also then turn into a dessert with our Coconut Rice Pudding we will prepare with, yes fresh mangoes! We will quench our thirst with a Ginger Hibiscus Cooler.

Having been raised on the beach in southern California and partly in Central America, Nissa was exposed to a lot of diversity and likes it that way. In addition to running Ger-Nis, Nissa is a long time culinary instructor specializing in fresh herbs. Besides being a passionate teacher of fresh herbs, organics and fair-trade, she enjoys spice (in her food and in her life), good conversation and debates, kickboxing, the ocean  and submersing herself in the food and culture of the world.
