This year with the Bolinas after school program we embark on the discovery and celebration of global cuisines. Learning flavors, ingredients and techniques of the world while we try to understand how culture, access to ingredients and even politics can shape the foods we eat. The region borders the Adriatic and Ionian seas, it has a semi-arid climate, this region also has an abundant groundwater source, making Puglia an agricultural haven. Much of its land is dedicated to farms, both for produce and livestock, with many of the local people still farming their own land. With farming giving the region its livelihood, the cuisine encompasses the farm to table concept, with fresh, bitter greens like turnip, mustard and dandelion, fava beans, tomatoes, and beef and lamb often on the daily menus. Traditional dishes incorporating layers of potatoes paired with vegetables and other local ingredients show the legacy of the Spanish rule, reflecting the region’s history through food. Puglia is also a main producer of olive oil, and of course, this wouldn’t be Italian cuisine without wine and pasta! Specifically known for their orecchiette, the ear-shaped pastas handmade by locals across the region.  Pasta by hand is an art form that is worth learning. We learn this skill and this shape and a bit more.
