This is a utilitarian class/workshop. We not only learn about making pies, but we make them in class and students take them home for the holiday or just to eat.  The class will emphasize a few of the season’s staple ingredients, allowing the natural sweet, tart and savory essences of Autumns bounty to shine through and assist us with flavor. Every potential Thanksgiving pie ingredient is put to use in this workshop! There is a wide range of knowledge to obtain when it comes to preparing holiday pies, from understanding and amplifying the spices to how to cut and cook the fruit, to mention all the different crust options that exist- open-faced, cross stich and even the easiest galette . We cover  the classics and Nissa’s favorite, the ultra-weird as well as everything in-between. There will be a crust decorating practice station where students can learn and perfect the various decorative styles.  All the tools and tricks of the trade are covered. Class size is VERY limited for this one but sipping on a Cinnamon Apple Pie Prosecco should get us all in the mood. A few light snacks will be served to nourish.

Students take home at least one fully finished pie as well as pie dough they will make in class for 2-3 pies on their own time!

She is fully committed to the community, as well as the planet, focusing on the entire cooking and eating process, from grower to “cooker.” In addition to traveling the world seeking organic and fair-trade conversation for her business, she is a noted cooking instructor & recipe writer focusing on fresh herbs as well as an extremist in proving that the art of eating and cooking well is a relatively simple process and just takes enthusiasm and some tidbits of knowledge. She has specialized in children’s cooking classes for many years and believes children are seeking better food knowledge and is always up for the challenge. Besides being a passionate about food she enjoys spice in general life, good food & cultural & political conversation and debates, yoga, the ocean and seeking joy along with  submersing herself in the food and culture of the world.
